Fattoush Salad
Fattoush is a Lebanese salad that features an array of fresh vegetables, including cucumber, tomato, lettuce, olives, parsley, mint, bell peppers, wild rocket, spring green onion, and cabbage. The name “Fattoush” is derived from the Arabic word “فتات” which means “crumbs.” This refers to the fried, crunchy pita bread that gives this dish its unique character.
Here’s how to prepare it:
Vegetable Preparation:
- Thoroughly wash all the vegetables.
- Cut the tomato, cucumber, radish, lettuce, and green spring onions into small pieces.
- Thinly slice the cabbage, parsley, and mint.
- Add some olives (if you prefer olives)
Sauce Preparation:
- In a bowl, combine lemon juice, salt, dried mint, olive oil, and the essential ingredient: pomegranate molasses. Mix well and refrigerate alongside the prepared vegetables.
Pita Bread:
- Cut the pita into medium-sized cubes.
- Deep-fry the cubes until they turn golden brown, then place them on a sheet to drain excess oil.
Assembly:
- Mix the sauce with the salad, ensuring it coats all the vegetables.
- Just before serving, add the fried pita bread to the salad to maintain its crunchiness.
